Alternative stew with yam, egg plant, usually referred to as garden egg, is a fruit vegetable grown and found mostly in the tropics.
It belongs to the family of tomato, potatoes and onions. It is easy to plant and cultivate in the home garden. There are 3 different types;
- the white garden egg – mainly eaten raw;
- green garden egg with mottled white specks can ether be eaten raw or cooked;
- the large purple exotic garden egg – mainly used in cooking various dishes.
2 medium sized garden eggs
Big sized red pepper
1 tin tomato plum/5 medium sized fresh tomatoes
1 medium sized onion
Salt, thyme and curry – 1/4tsp
2 serving spoons of vegetable oil
Method of Preparation
Blend the pepper, onion and tomato together. Pour 2 serving spoons of vegetable oil into a saucepan and add the blended mix.
Add curry, thyme and some salt to taste. Allow to fry. Cook the garden egg until soft, peal off the skin, thereafter chop into small pieces and add this to the frying ingredients. Allow to fry for further 5 minutes. Serve hot.
