[Recipe 6] “Ojojo” (Water Yam Fritters)

Ingredients

1 Medium-sized water yam
2 Medium-sized red pepper
1 chili pepper,
1 small onion
Oil
Salt to taste (Optional)

Method of Preparation

Peel and rinse the water yam thoroughly and grate. Beat the grated yam adding a little water to lighten its thickness. Meanwhile, chop the pepper , chilies and onion and add a mixture to the water yam. Mix together adding a pinch of salt if desired. Roll into balls and fry in deep oil.

Drain on a kitchen paper and serve hot with “eko” or “agidi” or enjoy as it is…
